Nicolette Novak

Nicolette Novak is an entrepreneur, agricultural leader, and advocate for Niagara’s food and wine community, with deep roots in the region. She holds an Honours Bachelor of Arts in International Relations from the University of Toronto and has built a distinguished career spanning public service, agriculture, tourism, and business leadership.

Nicolette is the Founder of The Good Earth Food & Wine Co. in Beamsville, which she established in 1998 and grew into a nationally recognized culinary, wine, and agritourism destination before its sale in 2025. She was also the longtime owner and operator of Novak Farms, a tender fruit farm and vineyard in Niagara. Earlier in her career, Nicolette held senior roles in investor relations and public affairs and served with the Ontario Ministry of Agriculture and Food and the Legislative Assembly of Ontario.

Highly engaged in governance and community leadership, Nicolette has served on numerous provincial and regional boards and commissions, including the Niagara Escarpment Commission, the Ontario Farm Products Marketing Commission, and the Ontario Craft Wineries. She is a past President of the Twenty Valley Tourism Association and brings a strong understanding of governance, regional development, and community impact to her service with the Hotel Dieu Shaver Foundation.

Nicolette’s interest in joining the Hotel Dieu Shaver Foundation Board is rooted in the opportunity to contribute to the future of this important and well-respected institution. She is honoured to support the Foundation’s mission and the vital role it plays in the health and well-being of the Niagara community.
